From the slight sourness due to making the sponge, to the crunch of the seeds spread on
top of the bagels, to that elusive maltiness from the enhanced boiling water, these will make you crazy.
I put onion flakes on the bottom of the pan and then I sprinkle the heavily with onion flakes on
the top of the bagel.
I brushed
the top of each bagel slice with olive oil, then sprinkled with the combined sugar / seasonings.
Before the bagels begin to rise, you can use your finger dipped in water to smooth the dough on
the tops of the bagels.
Brush
the tops of the bagels generously with the 1 beaten egg.
Once raise brush
the top of the bagel with regular milk / dairy free milk and top it with your choice of seeds.
Put the seeds in a shallow bowl and dip
the top of each bagel lightly into seeds.
