in an omelet or maybe on a sliced
of whole - grain
toast with cheese broiled on
top (a modified pizza, heh).

of it's then wrapped
in a tortilla (or you could enjoy it on
top of some
toast) and breakfast is served!
I often make a little bit
of this
in the morning, drape it over garlic - rubbed
toast, with a poached egg on
top of it all.
Perfect to
top a slice
of slightly
toasted sourdough smeared with goat cheese and maybe a spot
of pesto —
in fact that's exactly what my 16 year old son requested for his birthday dinner
in January (they froze fairly well, but not as good as freshly made).
Dressed
in a yogurt - lemon sauce and
topped with honey
toasted walnuts, this salad is chock - full

While I like them riper than I did
in my childhood days, there's a point where they are just to sweet for eating plain & are perfect for adding to oatmeal or

I added
toasted almonds and pecans on
top, which provide pops
of crunch
in almost every bite.
Top with a tomato slice and a tiny drizzle
of balsamic vinegar and place your
toasts in the oven for 15 minutes or until the cheese is melted.
What's
in it: 1 cup steal cut oats 1/2 cup quinoa (any color is fine), rinsed 1 14.5 oz can pumpkin puree 1 tablespoon pumpkin pie spice (or 2 teaspoons cinnamon, 1/2 teaspoon ground ginger, 1/2 teaspoon ground nutmeg) 1 tablespoon maple syrup (admit for no sugar added, add more if you like a sweeter oatmeal) 3 1/2 cups water 1/2 cup unsweetened vanilla almond milk (or any other milk you like)
Topping options (any combination
of your favorites): pomegranate seeds, chopped apples or pears, chia seeds, hemp hearts, pumpkin seeds,
toasted or candied pecans, slivered almonds, roasted coconut chips, (brown sugar or maple syrup if you have a sweet tooth).
What's
in it: For the french
toast --- 1/2 large loaf
of multigrain bread, ideally a few days old, cut into 1 inch cubes (about 5 cups cubes)-- 4 large eggs — 1 1/2 cups vanilla almond milk ** — 1 teaspoons cinnamon — 1 teaspoon vanilla extract — 1/4 teaspoon salt For the apples --- 3 - 4 apples, thinly sliced — 1/2 teaspoon cinnamon — 1 tablespoon coconut oil For the
topping --- 1/3 cup roughly chopped raw nuts and seeds (I used almonds and sunflower seeds)-- 1 - 2 tablespoons brown sugar (depending on your sweetness preference)-- 1/4 teaspoon salt
Place one
toasted pecan half on
top of the cookie dough ball and press down until it is somewhat imbedded
in the dough.
Sprinkled on
top of avocado
toast, or a tablespoon thrown
in to my morning oatmeal / granola is how I usually enjoy my hemp hearts.
Once they're cool enough to handle, remove from the pan, dip the
top part
of each donut
in the icing
topping, and then sprinkle with
toasted coconut flakes.
Like
in cocktails, and on
top of ice cream, yogurt, tarts, panna cotta, oats and / or
toast.
When I was
in London I had ratatouille several times for breakfast,
topped with a poached egg and spooned onto thick slices
of buttered
toast.
Wasa crispbreads / crackers are also a great option for snacks, not just
in this strawberry yogurt parfait but as a base to
top with whatever your mind can come up with — we had some with mashed avocado yesterday for a kind
of avocado
toast without the need to
toast the bread.
Toasted 8 walnut halves
in the oven, then placed these on
top of the melted chocolate and left to set.
In a medium bowl, combine 2 1/4 cup (should have 1/4 cup remaining for
top of truffles)
toasted pecans, graham cracker crumbs, brown sugar, and salt.
I also made a batch
of this awesome coconut caramel sauce to drizzle on
top, and dipped the fudgsicles
in toasted coconut flakes.
Now because I'm a huge fan
of coconut (I think this is pretty well known by my regular readers) and coconut WITH pumpkin pie makes sense to me, I added some shredded coconut
in the mix and then
topped the bars with
toasted coconut!
Atop a hot piece
of french
toast drowned
in maple syrup, I crumbled these chocolate toffee pieces, allowing the chocolate to melt and pool over the
top of the french
toast while the toffee retained its textured crunch.
Toast a wedge and
top with some peanut butter and a few banana slices for a little taste
of heaven
in your mouth.
Then,
in a medium bowl, add your
toasted pecans (reserve 1/4 cup for the
top of the truffles) graham cracker crumbs, brown sugar and salt and combine well.
The base and
top are comprised
of an oat
toasted maple syrup nut concoction, sandwiching
in the silky dark chocolate pumpkin fudge!
We
toast some pita
in the oven with lots
of olive oil and salt, and while that's going chop up some veggies (whatever I have around), and herbs, then dump the dressing on
top.
Then my go - to meal at the end
of a long day
in the stacks is a piping hot bowl
of beans lovingly
topped with a little fruity olive oil and some sea salt, accompanied by whatever greens or green veggies are handy and some buttered
toast, all
in one bowl.
What's
in it: 1 15 - oz can
of pure pumpkin puree 2 tablespoons good quality maple syrup (less if you are watching sugar intake) 1 teaspoon vanilla extract 1 teaspoon pumpkin pie spice 1/2 teaspoon cinnamon 2 cups non-fat greek yogurt (recommend plain but if you need extra sweetness vanilla would work)
Toppings: Low fat granola, chia seeds, dried cranberries, chopped nuts,
toasted coconut
* mushroom
toast (slice and stir - fry onions + mushrooms
of your choice, add herbs, salt + pepper, put on
toast,
top with a mix
of sour cream and grated cheese, bake
in the oven until golden)
It is cloyingly sweet and, except for the
toasted nuts
in the
topping, there is little to recommend it
in terms
of flavor.
The next time you're
in need
of a sweet treat, try the one that's replaced my late night cereal fix: plain whole - milk Greek yogurt
topped with cocoa nibs,
toasted unsweetened coconut flakes and a tiny bit
of fresh fruit.

Eat by the spoonful, spread on

I love to sprinkle a little extra coconut on
top of each cookie so it can get golden and
toasted in the oven.
