With sugar already featured in
fish sauce, I omitted the restaurant's suggestion of palm sugar and in favor of achieving perfectly al dente sprouts, I skipped
roasting them in the oven and simply sautéed them stove -
top in a hot cast iron skillet.
A whole
fish is cooked and
topped with this savory Mediterranean Meyer lemon - olive sauce over
roasted fennel.
It holds its own as a meal and is great
topped with a bit of goat or feta cheese, and it also works well as a side dish along with simple grilled or
roasted fish or chicken.
For lunch, I like to have soup, stew, or
roasted vegetables such as sweet potato and zucchini with coconut or olive oil on
top, with a small side of protein in the form of a hardboiled egg, tofu, Edamame, chicken or
fish.
I love dipping
roasted sweet potatoes in it, drizzling it on my
roasted veggies, on
top of
fish tacos (or any tacos), on eggs, instead of mayo on a turkey sandwich... you get the idea.
Serve this pea and cauliflower pilaf alongside your favourite protein; it would be perfect with grilled or
roasted meat or
fish, or
topped with sliced hard boiled eggs or a tin of tuna for a packed lunch option.
