Try
mashing avocado, ricotta or peas onto toast, then
topping with a swirl of ribbons for an elegant, easy appetizer or lunch.
Wasa crispbreads / crackers are also a great option for snacks, not just in this strawberry yogurt parfait but as a base to
top with whatever your mind can come up
with — we had some
with mashed avocado yesterday for a kind of
avocado toast without the need to toast the bread.
The leftover turkey is jazzed up
with some
mashed avocado, a spicy, but creamy chipotle mayo, and
topped with melted cheese and crunchy veggies.
The hands - down easiest dish that I (David) know (and make when I'm alone
with the kids and have max 10 minutes to prepare dinner) is to cook a package of fresh gnocchi, mix a store - bought pesto
with mashed avocado, add a little extra lemon and olive oil and just stir everything together

toppings, this makeover uses sautéed kale,
mashed potatoes, fresh
avocado salad, and just a bit of queso fresco.
If you have a gluten issue, swap in gluten - free bread or spread the
mashed avocado on gluten - free crackers and
top with one strawberry rather than 3 - 4 strawberries.

Lately I've been in a bit of a breakfast rut that involves toast
topped with hummus or
mashed avocado, homemade sauerkraut, and broccoli sprouts that I've been growing in a mason jar.
I made these last night
with a couple of changes — didn't have feta so used parmigiano, and didn't have yogurt so I
mashed up some very ripe
avocado with lime juice to put on
top.
Crisp Toast in the morning
with creamy
avocado mashed on
top and a sprinkle of coarse sea salt is how I like to start my day.
Especially when those flourless waffles are EXTRA HEALTHY because they are made
with plantains, toasted in a pan to crispy perfection, and then
topped with all of the green glory that is
mashed avocado.

I fry or poach an egg I toast 2 pieces of sourdough bread (use whatever bread you'd like that's just my fave) instead of butter etc I use coconut oil then I
mash up whole or half an
avocado depending on how hungry I am squeeze some 1/4 lime or lemon into avo spread it on
top of the toast and sprinkle salt and pepper as well as some pine nuts (or anything else you'd like to
top it
with) and when I have tomatoes I like to cut up a few and add them as well.
You could try a toasted slice of gluten - free bread
topped with mashed avocado or pesto, chilled sliced chicken or turkey breast, and a layer of veggies; or herbed cottage cheese mixed
with chopped veggies and tahini.
