Before I visited Modena, the home of
Traditional Balsamic Vinegar, I just though all balsamic was the same.
He taught us the basics of how to make
traditional balsamic vinegar.
It is home to Parmigiano Reggiano, Prosciutto di Parma,
traditional balsamic vinegar, and more.
The consortium in Emilia Romagna that regulates Balsamico di Modena, sets the standards in the region, allowing
traditional balsamic vinegar that has been aged at least 12 years to be considered aceto balsamico di Modena tradizionale.
Buying Tip:
Traditional Balsamic Vinegar of Modena is pricey, so if you're looking at a small bottle in a shop for 5 or 10 euros, it's not the real stuff.
Aceto Balsamico Tradizionale di Modena (
Traditional Balsamic Vinegar of Modena) is made from a reduction of cooked Trebbiano grapes and sometimes Lambrusco grapes.

It's a little out of the box for me to think about adding strawberry
balsamic vinegar to the
traditional strawberry topping — but I think I must TRY it.
It seems we can't tour Emilia Romagna without stopping at a producer of

balsamic vinegar.
