I
tried experimenting with recipes that were a little more complex than my usual, like making
pesto out of cashews and
avocados and serving it over a plate of zoodles.
You could
try a toasted slice of gluten - free bread topped with mashed
avocado or
pesto, chilled sliced chicken or turkey breast, and a layer of veggies; or herbed cottage cheese mixed with chopped veggies and tahini.
Pesto is crazy versatile and I usually have a batch of some variation in the fridge - I use it as salad dressing, toss it with roasted veggies, mix it with cooked grains, drizzle on
avocado toast, and throw it on top of my hummus (a must -
try).

try adding other foods instead of meat (olives,
avocado, nuts, seeds,
