try adding a little

cooked veggie dishes, eat fruit, more frequent / larger portions of grains, GF crackers
with hummus, etc..
I'd
try cooking with a variety of veggie fats, including
coconut oil and cream (I'm thinking for curries), avocado, tree nuts, olives, etc..
You should
try to replace your usual
cooking oil with coconut oil and use it that way, rather than adding it as an extra fat.
I've never
