I haven't
tried dairy kefir grains, but I have been brewing water kefir and making kefir «soda», which is a probiotic the kids will actually drink.

I can't really answer your question because I have never
tried converting
dairy grains to water
kefir.
My kids always have a water bottle at school, but in their lunch I tend to slip in a small glass jar of
kefir (water or
dairy), kombucha, smoothie, or organic raw milk... again it is about
trying to fuel them for the brief spell they are sitting before heading to recess.
For even more probiotics,
try Greek yogurt or
kefir, a tangy
dairy drink that's packed with good bugs.
I am not a fan of commercial milk myself and have been «commercial
dairy free» for quite a while, I think
kefir would be a great thing to
try.
Unfortanately, anybody that eats a highly vegetarian or vegan diet, or purposely avoids the fat from animal foods typically doesn't get enough vitamin K2 because K2 is almost entirely found in certain animal foods such as the fat portion of pasture - raised
dairy (butter and cream, full - fat yogurt,
kefir, and also full - fat aged cheeses), egg yolks, or in some fermented foods like natto, which most people have never even
tried.

try eliminating the yogurt /
kefir; according to the GAPS FAQ (PDF version), high - protein
dairy can aggravate constipation.

try kefir made from raw
dairy.
Would you recommend that I do FODMAPS strictly for a while without
trying any gluten or
dairy, or should I go for things like plain lactose free
kefir or 100 % spelt bread right away as part of my trial?
But if you stay away from
dairy products but still want the probiotic benefits of
kefir, you can
try coconut
kefir.
