tried making this
recipe egg free and it froze
in my blender as well because the
egg substitutes tend be thicker than actual
eggs.
I find that vegan
recipes are better than
trying to
substitute the
eggs in a regular
recipe.

in the book Breaking the vicious circle Elaine
substituted puréed apple for
eggs, I've made her almond muffins with puréed apple and they work, but haven't
tried it with Elana's
recipes.
Hi, I'm from India and a vegan by nature.I'd like to say I
tried the
recipe with one scoop of rice flour and two scoops of gram flour, made into a paste, as a
substitute for the
eggs, it turned out quite nicely.The rice flour and gram flour are used as thickening agents
in Indian cooking and they
substitute well for
eggs.
If you are also baking without
eggs,
try adding 1 tsp lemon juice
in 1 C. cold water (
substitute for some of your liquid ~ adjust quantity if your
recipe calls for less liquid) and be sure your
recipe calls for baking SODA (or add 1 tsp).
You can
try using an
egg substitute like mixing ground flax seeds with water, but I haven't tested it
in this
recipe so I'm not sure how it will work.

in traditional baking with gluten - based flours bananas or applesauce can often be
substituted for
eggs.
