You could definitely try using softened butter or ghee instead, possibly even coconut oil!
My suggestion would be to try it with another egg yolk, or maybe use a whole egg and follow an immersion blender mayo recipe and let the melted ghee cool.
I tried it once as is and it was great but a bit too much coconut flavor so I used ghee instead of coconut oil and that really helped.
(Side note: I even tried rubbing ghee on my nipples at one point, on the suggestion of an Indian mama friend, but it smelled way too delicious to continue use and didn't actually work that well.)
If you've never tried it, I highly suggest making ghee and using it in your cooking.
