tried using powdered stevia in this recipe so not sure if that would work.
You could
try using powdered honey or maple sugar if you want any of it to coat the top of the cake and not all sink in.

try — I'd recommend
using gel coloring because it mixes in more quickly and evenly than
powder — divide the batter as soon as the meringue has been incorporated but before it gets to piping stage, otherwise it will be overmixed after you stir in the color.
I like that they are corn starch free, at least if you don't
use powdered sugar, but since there is no way I've ever discovered a way I like coconut, I won't be even
