Hi I have been trying a lot of your recipes and really enjoying them, I have been reading a lot though about you are meant to soak and then dry out seeds etc before using them, just wondered if you do this or if you think it is necessary?

Though I tried it with quinoa instead of couscous since my husband must be gluten free — substituting in the quinoa worked great however, and so this recipe was easily adaptable and VERY tasty:) Thanks so much for posting this!
Truly, though, as much as I love deep, dark chocolate, I think some percentages and brands actually might be too bitter and a bit lacking in sweetness and, as a result, might not be quite as successful in this recipe as the semi-sweet chocolate we call for — but I'd really love to hear back from you if you try it!

One question though, you mentioned how to measure the flour for your recipes and gave a weight in grams (thank you) but I have tried American recipes before and I think our tablespoon measure might be different also.

I am really trying to do Paleo and look at all these recipes at the same time though things like onion, garlic, apple cider vinegar and agave keep popping up and substitutions are the name of the game.

Hello David, I am Kirti from Pune India, I love your blog, though I don't try all your recipes since I am a vegetarian and I do not get most of the ingredients but I enjoy your writing and it is like a tour of Europe and USA for me through food, It's getting very hot here in India and I tried your coconut saffron ice cream (I have a coconut tree in my backyard) sans the ice cream machine, turned out yum!
