You could
try using something like raisins,
dried cranberries or goji berries however I haven't
tried this myself before so I'm not too sure how they're turn out!
In the meantime, I have my leftovers to look forward to: — a spinach salad with breast meat, fresh pineapple chunks,
dried cranberries, and some shredded carrots and apples (I love colorful salads)-- my Pumpkin chicken skillet, based off of Gluten - Free Mommy's pumpkin chicken tortillas (but I

Whats great about these is there are so many different variations you can
try with energy bites, swap the chocolate chips for raisins or
dried cranberries if you prefer but Duh....

I have
tried Megan's recipe the past two Thanksgivings using
dried cranberries, and it is possible, but you have to alter the sweetness since
dried cranberries are sweetened already.
Regarding interesting ways to eat quinoa - I just recently
tried it for the first time, and it was a cold salad of quinoa, chopped granny smith apples,
dried cranberries, cilantro and seasoned with lemon juice and salt / pepper.
You do not have to stick with walnuts and
cranberries, you can
try other types of nuts or
dried fruits.
