My understanding — 2nd hand, but from reliable «sciency» food writers, is that when you salt the
bean soaking liquid, the salt gets in the
bean and then causes the
bean to repel water — which has explained a period of time when EVERY SINGLE time I

other the little buggers came out hard, no matter how long they soaked or cooked.

try to buy Low Sodium
Beans and that one I do not since I don't add any salt.
Tried a new salad the the
other night which has become my new fave: 3 firm avocados, cubed 1 can black
beans, rinsed and drained 1 fresh jalapeno, finely chopped 1 cup of grape tomatoes, halved, or just 1 cup of freshest possible diced tomatoes 1/2 cup chopped cilantro juice of one fresh lime 2 Tbsp olive oil 3 tsp balsamic vinegar Combine all ingredients.
You could definitely
try this out with a really good gluten - free flour blend that is easier for you to find up there — just stay away from the ones that have
bean flours or are called baking «mixes» because they have a bunch of
other ingredients.
Hi Jolly, Here are some suggestions for substitutions for those ingredients... chickpeas: any
other bean you like / can eat cherries: blueberries or strawberries avocados: this is the toughest one, but you can
try subbing cashew cream (soaked cashews blended with water) for the avocado in the salad dressing and pudding cauliflower: Brussels sprouts or broccoli apple: pear, orange, or pineapple sunflower seeds: almonds or any
other nut (this would make the cleanse no longer nut - free, but if you know you have no sensitivity to nuts, it's no big deal) Hope that helps!
Variation: Use
other vegetables in place of the ones suggested here —
try corn kernels, diced carrots, bell peppers, green
beans, sliced mushrooms, yellow summer squash — whatever is available and whatever your family likes.
