My near black bananas were extra large and
soft so the mashing was easy, but I managed to explode most of the
butter into the microwave while melting it (oops, won't
try that technique again), so I added a bit of oil to make up for the lost
butter, and I used a bit of pumpkin pie spice and a tablespoon of Amaretto instead of the recipe spices and bourbon.
I should have known that hand whisking
soft butter and eggs would end in lumpy egg -
butter, but I
tried it anyway.
This peanut
butter may be a little
softer than some other varieties you've
tried.
You could
try adding in coconut oil which might keep it
softer, or switch to a nut
butter with coconut oil.
I also suggest you
try the banana
soft serve with some of the extra chocolate peanut
butter blended in:D)
I am
trying to find a recipe that uses other oils as well as the
butter to cut down on cost and make them a bit more
soft — this looks perfect.
