I am really glad you liked this dessert:) it is wonderful - I didn't want to say that
vegan diet is restrictive, as I know there are so many delicious ways of preparing
vegan dishes, I was just
trying to say I don't want to restrict myself to a specific
diet.
Since I also
try to follow a plant - based
diet, it needed to be
vegan.
Since I switch to a plant base
diet, I have
tried a dozen or so of those
vegan crepes / pancake recipes and they all have this muchy gooey undercooked inside including this one.
But I'm not interested in going
vegan at the moment, nor am I going to switch into an endless sucession of strict
diets that will make me unhappy about food (trust me, I've
tried), no matter what others say.
I read «Eat and Run» by Scott Jurek last month, and decided that I would challenge myself to
try and eat and train like Jurek this month (albeit with few less miles than he does and a little less stringent on the
diet), and this is the first
vegan recipe I've made that is actually delicious.
