"turkey thighs" refers to the meaty part of a turkey's leg.

I switched the recipe to
using turkey thighs because each thigh is a perfect portion for one person.
But you will still get 31 grams from 4 ounces of turkey leg and 21 grams from 4 ounces
of turkey thigh.
