This single serving recipe calls for Smoked Gruyere and Fontina
cheeses, but don't worry if you can't find those particular
types of cheese in your grocery store.
Also, it depends on the
type of cheese you use, like I used fresh ricotta so it
did not change the flavor much, but if you use a
cheese which melts really well can take this omelette to another level, I swear!
If not, don't feel the need to purchase several different
types of cheeses for the recipes.

of what the recipe states and add more to taste) with some cream
