I did look at the mahi mahi — which I love that fish --- and
the udon noodle recipe.

I had already gathered necessary ingredients to make this Post-punk Kitchen curry
udon recipe, but hadn't been able to find the
udon noodles during my usual trip to Trader Joe's.
Bought some stuff to make curried
udon noodles for the first time for a different
recipe, then went to read the comments of people saying it was bland.
I've long been a fan of Asian style
noodle soups as a light, quick dinner option (like laksa or
udon noodle soup) so when I came across a
recipe for a Chinese
noodle soup I knew it would make an excellent addition to my dinner rotation.
Flipping though there's
recipes for sweet pea guacamole and spicy
udon noodles, chicken with mushrooms and thyme and also roasted red pepper gazpacho — really, this cookbook has a little bit of everything.

noodles for this vegan
recipe but it works equally well with

noodles, zoodles or even simple spaghetti.
