I haven't worked with
udon noodles for a while, but I've been meaning too — I just need to clear some space on the pasta shelf before I purchase anything else from the store!
Bought some stuff to make curried
udon noodles for the first time for a different recipe, then went to read the comments of people saying it was bland.
Not exact matches
Grate and dice the vegetables, and cook the
udon noodles as instructed on the package (I cooked mine in boiling water
for approx. 4 minutes).
I've long been a fan of Asian style
noodle soups as a light, quick dinner option (like laksa or
udon noodle soup) so when I came across a recipe
for a Chinese
noodle soup I knew it would make an excellent addition to my dinner rotation.
Flipping though there's recipes
for sweet pea guacamole and spicy
udon noodles, chicken with mushrooms and thyme and also roasted red pepper gazpacho — really, this cookbook has a little bit of everything.
For the
noodle salad — 200 g soba
noodles (you can use
udon or rice
noodles)-- 150 g French beans, ends trimmed — 1/2 long cucumber, thinly sliced — 4 spring onions, sliced — 6 - 8 fresh basil leaves, chopped — a small bunch of coriander, chopped — salt
For hot
udon, prepare the soup stock separately from the
noodles, and serve hot.
Though famous
for its soba
noodles later in the day, this hallway of a spot opens at 7 a.m., doling out miso soup,
udon, pickles, rice, vegetable side dishes and more fish than would show up on a continental breakfast menu.
And those thick
udon noodles are great
for slurping.
I used soba
noodles for this vegan recipe but it works equally well with
udon, rice
noodles, zoodles or even simple spaghetti.

for it's ease, followed recipe but had a few add - ins, used Trader Joe's miso ginger soup, 2 tsp chicken broth, bagged baby greens of spinach, chard, and, kale, fresh mushrooms, pkg of frozen stir fry,
udon noodles, and shrimp.

Udon Noodle Soup takes just minutes to put together and is great
for cold - weather lunch option when salads and sandwiches are less appealing.
1 cup unsalted roasted peanuts 1 red chili, deseeded and roughly chopped 1 lime, zest and juice 3 garlic cloves, peeled 1 - inch piece ginger, peeled and sliced 1 handful cilantro plus more
for garnish 1/2 teaspoon salt 2 teaspoons canola oil 2 boneless skinless chicken breasts, sliced 8 ounces bok choi, stems sliced and leaves roughly torn 1 red pepper, deseeded and sliced 2 tablespoons low sodium soy sauce 8 ounces
udon noodles, cooked
And that's okay, but look
for a variety of types of
noodles, especially buckwheat, kamut,
udon, which deliver protein, fiber and other nutrients and antioxidants.
If you feel like a break from thick
udon and egg
noodles, swap them
for rice vermicelli, buckwheat and glass
noodles.
You could use this to season a
noodle dish like Cha soba,
udon, Japanese style meat and potato stew, or a seasoning
for an omelette.
