white flour, because I don't like the thought of using bleached products
in my baking

I believe the only difference is bleached
flour has been made chemically
whiter in appearance than
unbleached flour.
Notes: I had success replacing the
unbleached flour with
white spelt
flour — but I'm afraid other whole grain
flours may be too heavy (resulting
in dense / chewier cinnamon rolls).
I am wondering if using organic
unbleached white flour (Bob's Red mill)
in place of the GF
flours will work
in this recipe?

in Nourishing Traditions this is the one recipe where the principles of the cookbook are compromised and
unbleached white flour is used.
Interestingly, his experiments showed that
unbleached flour and
white rice were less anti-calcifying than whole grains that contain more minerals but also were higher
in phytic acid.
