Place the vegetables (onions, potatoes, etc)
under chicken in baking or roasting pan.
Add more
oil under the chicken if necessary, then cook on the other side for an additional 3 - 4 minutes.
Carefully work your
hands under the chicken breast skin and lay two bay leaves on each breast, along with a pat of butter.
In this preparation, the bulbs and white stalks were

directly under your chicken.

I actually toasted the pita a little and served

Where exactly do you place the fennel bulb,
under the chicken or inside, that sounds really good, I love fennel.
Arrange the lemon pieces, shallots, and garlic around and
under the chicken and sprinkle with the rosemary and oregano.
