This
recipe is all about getting healthy ingredients, like almond milk,
unsweetened apple sauce, and olive oil, but these muffins certainly don't taste like cardboard!
I tried this
recipe last night with a couple of substitutions that worked great: — I only used 1 T of oil and added 1 T of
unsweetened apple sauce — I only used 1/2 c sugar — I used half whole wheat flour and half white bread flour
For an egg substitute — I see someone was asking above — on other
recipes I've seen
unsweetened apple sauce used or mix flaxseed meal with water and let sit for 5 minutes before adding (1 tablespoon flaxseed meal & 2 tablespoons water for each egg).
We make our own
apple sauce and even though it is
unsweetened, it tastes very sweet and works perfect in this
recipe.
I haven't tried this
recipe with anything else so I can't say for sure what would work, but I think you could try replacing the mashed banana with 1 1/2 cups of
unsweetened apple sauce and see how that works out.
