I'm dairy free - could I use
unsweetened raw cacao powder in lieu of the cocoa and raw cacao nibs in place of the chocolate?

unsweetened cocoa powder is different to
raw cacao so you would have needed about triple the amount listed in the recipe to get the right flavour!

It is chocolate in its
rawest form and this means that
unsweetened chocolate is just ground cocoa nibs that have been refined and contain between 50 - 55 % cocoa butter (
cacao fat).
Just be sure you choose plain and
unsweetened cocoa or
raw cacao to get the best form possible, (though I admit personally do love a darker, Dutch - processed cocoa powder myself!).
