I also ended
up cooking the veggies about 8 - 10 minutes to get them crisp tender.
Just a suggestion: I used to make soup all of the time on the stove and then puree in my vitamix but now I just use a stick blender to blend
up my cooked veggies right in the pot and it saves so much time and MESS!

Watching the food network
cooking show with Giada and seeing her fry
veggies up, I knew I wanted to try my hand at just baking them.
That comes in handy getting
veggies steamed while the rice is
cooking or can be used to, say, make some fish
up top while the rice
cooks below.
I manage to do the grocery shopping each week and prepare a few things (slice
up veggies,
cook some protein) but I never get to the stage of actual meal planning.
These vegan kofte kebabs are made with a mixture of spiced chickpeas, rolled
up and
cooked on skewers with summer
veggies.
I've mentioned before that I usually like to throw some homemade sausage and some
veggies in a pan a
cook up an easy breakfast.
Once the potatoes started to
cook down and soften I added some frozen mixed
veggies w / broccoli, carrots, kidney beans, and it was a perfect addition — the hearty
veggies were able to stand
up to the simmer by softening w / o going mushy.
You can
cook the pasta and
veggies up to 3 days in advance and store them (without the sauce) into separate containers.
As for this recipe, I often
cook up a big batch of beans or grains to use the whole week — then use them in recipes like this I made it with fresh
veggies and previously
cooked, refrigerated beans and it was spectacular!
But before I go on and on about how I love the Fall, I'll share a hint of what we've been
up to recently — lots of
cooking / making with fresh local
veggies!
I did use a couple variations based on the Confit Byaldi recipe you give the link to above: 1)
cooked the onion and garlic, salt and pepper in olive oil until soft in a pan, then 2) took half a red bell pepper,
cooked according to the Byaldi recipe, chopped it and mixed into the mix above, 3) simmered the whole thing with some parsley, thyme leaves and half a bay leaf, removing the thyme and bay leaf once it heated
up; 4) used sliced tomatoes instead of red bell peppers interspersed with the other
veggies, and made the vinaigrette according to the Byaldi recipe to decorate the plates / dip the ratatouille in.

If I have roasted vegetables or
cooked beans that I want to use
up, I'll add them in after I've simmered any of the raw
veggies.
You can bake treats for your pets,
cook for them, and come
up with all kinds of creations made with pet - friendly ingredients such as
veggies, some fruits, protein sources, healthy sources of fiber, and healthy fats.
But the ultimate easy meal is kielbasa chopped
up and
cooked with whatever
veggies we have on hand.
Toast sesame seeds first in a dry pan
Cook wild rice (Trader Joe's has a nice blend with daikon radish sprouts) Chop and saute
veggies — usually lots of greens, garlic and onions, plus whatever else I happen to have Scramble a few eggs or chop
up some leftover meat
The pickled
veggies couldn't be simpler, shredded carrots, radishes and cucumber are tossed in a little bit of sugar, rice vinegar and left to marinate while the pork is
cooked and the sauce is made
up.
You can mix
up the
veggies... for instance right now I am eating it with some kale I
cooked up in the EVOO / garlic mixture and added a pinch of crushed red pepper for a little kick, but I have also used chopped
up Swiss chard.
OK, here are some favorites we've been
cooking up at my place: - vegetable curry (grind my own whole spices, use whatever
veggies we get in our weekly CSA share; radishes / beets, eggplant, squash, greens, etc)- quick kale (sauteed with coconut oil, chili flakes, garlic, [lemon grass], soy sauce, lemon juice)- pac choi w / sauteed mushrooms «chinese» style (with fish sauce, rice wine vinegar, jalepeno / chili, soy sauce, etc)- roasted radishes w / poached eggs - «teamwork pasta» — this is your recipe for pepper and cheese pasta, but it helps having two sets of hands to make it in our house... we put an egg on this too of course - tuna pasta (chopped onion, garlic, lemon zest, chili flakes, tuna, olives — easily adaptable to what you already have in the house and like)- roast chicken on friday - roasted sweet potatoes - omlets - challa french toast

cooked up some brown rice and lightly sautéed some
veggies with the pineapple and made a light sauce.
Then I added the frozen
veggies and chicken and
cooked just a bit more on saute mode to warm it back
up.
But with something like this that
cooks fast and has a crunchy breading, it seems like the only way to freeze it would be to cut the chicken, put it in a bag, cut the
veggies, put them in a bag and then prep the sauce, although I can throw that together faster than it takes the pan to heat
up.
While the
veggies are
cooking, cube
up the tempeh and add that your sauté pan.
You can use any
cooked or raw
veggies that you may have on hand, and you can also add some cut
up cheese or meat for additional protein.

The raw
veggies go in early, the
cooked ones at the last minute to warm
up.
Pour your sauce over the
veggies and put the cover it back
up for another 5 - 10 minutes, or until everything looks
cooked through.
While that was
cooking, I chopped
up all of the
veggies that I had purchased.
For this vegetable pasta recipe, I saute
up onions and lots of garlic in olive oil, plus whatever
veggies are lounging in the crisper that day and toss it all together with some
cooked pasta, a few seasonings, and an extra splash of oil for good measure.
My newest food for Noelle are quinoa patties / pancakes -
cooked quinoa mixed with some eggs, with or without diced
veggies, then fried
up like pancakes with a little coconut oil.
