This masala baked Indian tofu is made with baked
up cubes of tofu in spicy curried tomato sauce.

A wonderful way to use
up large quantities
of greens is Saag Paneer, a creamy, curried puree
of greens, bathing little fried
cubes of paneer or (my usual choice)
tofu.
Firmer types
of tofu are delicious cut
up into
cubes and stir fried with some vegetables, or added into your favourite curry recipe.
Step 1: First, sauté
up some veggies like celery, carrots, onion and 2 cloves
of garlic — and
cubes of tofu too.
I only used 2/3
of the amount in the recipe, and the curry still ended
up looking more like a liquidy soup with
tofu cubes floating here and there.
Allow individuals to layer
up their own tacos as they wish -
tofu scramble, sweet potato
cubes, avocado slices, coriander and spring onions and a squeeze
of lime and drizzle
of hot sauce.
You can make a meal out
of appetizers if they're healthy: grapes and strawberries, cherry tomatoes and chunks
of low - fat cheese, cut -
up melon, olives and chunks
of cooked chicken, and firm
tofu cubes are just a few options.
Push the
tofu tenderly with the back
of your ladle or wok scoop to mix it into the sauce without breaking
up the
cubes.
