After quite a bit of trial, error and substitution
over the years, I've come
up with this brine recipe that has been my go - to recipe for many holiday
meals.
I made a batch & i had some left
over so i made a smoothie bowl out of it, added some vanilla protein powder to make a
meal (that thickened it
up too), sprinkled some banana chips, pumpkin seeds / pepitas, sunflower seeds & whole cashews on top.
I make lists, I plan a weeks worth of
meals and shop accordingly (actually, Miguel shops accordingly - with a typed
up list, broken down by market) and I always cook with the mind set that there needs to be something left
over for lunch the next day.
And, by «well» I mean my legs are tight all
over, I'm eating 3
meals every 3 hours,
up each morning at 4:45 and ready for bed by 6 pm, BUT I'm not injured, so I am all GOOD.
It's these small steps taken
over the course of a few days leading
up to the holiday that make cooking this
meal so much easier than you might expect.
Several other misplaced items and dirty dishes slowed me down and I didn't stop the timer every time, but I still managed to make this
meal in JUST
over 30 minutes (if you're making rice, you may need an extra 3 - 5 minutes to get that measured and set
up).
With
over 60 lightened

over until the other side turns golden brown 7) Repeat last step until all the batter is used
up 8) Serve pancakes warm with cut bananas drizzled in honey

up our tummies, whether we are entertaining or just tiding
over to the next
