With all of the Smoothies I make,
we use Kefir Milk, but use your favorite milk, dairy or not it will still taste great.
This recipe is based on my Pumpkin Spice Pancakes with a few differences:
I used kefir milk, homemade chunky applesauce, organic vanilla and fresh organic blueberries.
I was thinking of
using kefir milk instead of coconut milk.
Not exact matches
The production all starts with
kefir grains, which are small rubbery bits and are
used to start the fermentation process when making
milk kefir.
Liquid whey from yogurt,
kefir or clabbered
milk may also be
used.
In making this cake I
used cultured coconut
milk (it
used to be called coconut
kefir) in place of the buttermilk.
Also, if he has issues with goats
milk powder, do ou think that
using goats
milk turned into
kefir could work or too much overload for his belly?
Like regular
milk kefir, coconut
milk kefir is made by
using milk kefir grains to ferment the coconut
milk, but of course it is dairy free.
So while dairy
milks (cow, goat, sheep) are going to provide the best substrate for proliferating
kefir grains, for those who avoid dairy, we can also
use them to ferment nut
milks!
I'm fairly new to fermenting, in fact, I'd only ever fermented
kefir using cow's
milk and the result was seriously tart — so tart, it was undrinkable.
When someone left a comment on my water
kefir post asking if it was possible to
use the same grains to make
milk kefir, I figured I'd give it a try.
It
uses kefir grains (not an actual grain) to ferment
milk, making it a liquid yogurt type beverage.
We found that it took around 7 weeks of regular fermentation in dairy
milk to fully recover
milk kefir grains so that they would reproduce after having been
used to ferment coconut
milk for 2 weeks.
I
used coconut
milk kefir for this recipe.
I also
used whole Organic
Kefir Milk in this recipe.
The batter should be like a thick sour cream, so to get the right thickness — better to
use a full fat
kefir (sour
milk or buttermilk).
This yeast activity is also why one can
use milk kefir as a bread - leavening agent much like a sourdough starter.
I also give instructions for a second fermentation for
milk kefir using a non-permeable lid.
This second fermentation tends to mellow the flavor of
milk kefir and can also be
used to imbue a flavor such as citrus or spices into the
milk kefir.
I've been making my own
milk kefir for a few months now and having so much of it on hand has forced me to get creative in my
uses!
I
use the 7» every day or every other day to strain
milk Kefir, and this little strainer is impressive in quality and ease of cleaning.

To cover my kombucha,
milk kefir and yogurt jars while fermenting I
use an unbleached coffee filter held on with a covered elastic ponytail holder which works great!
This time I ditched the faux cheese and
used plain goat's
milk kefir.
FYI, you can also
use an organic probiotic bill to and put it into the cashew cream / nut cream / or nut free hemp (any) seed cream... to to turn it into yogurt / if you can't buy real
Kefir Bacteria (Lactobacilli bacteria)- Its not dairy but is
used to make
milk into
Kefir and after its
used to turn
milks into yogurt, you can strain out the original chunks of bacteria (which is what we do here in Greece and then put the
Kefir in the freezer so you can perpetually re-
use it — while waiting for yogurt to become cheese.
We
use raw goat
milk, and culture with
kefir grains for a variety of
milk products and usually have an abundance of whey... I was so pleased to see this recipe!!!!!

You could try
using 1/2 cup yogurt and 1/2 cup
milk instead of the
kefir.
I don't do well with yogurt or
kefir so I
use coconut
milk instead.
I've personally found dairy
kefir to feel slightly acidic and inflammatory for me so I prefer to make almond

use probiotics.
You could
use any yogurt you like... flavored ones, Greek ones, whole
milk ones, and even
kefir!
I just read recently that you can make
kefir using almond
milk, but I don't know the details.
However, if you are
using watered down «drinking» coconut
milk from a tetra pak (not all brands are watered down for drinking), then you will need to either drip it thick like old - fashioned yogurt, or
use it like
kefir in smoothies.
You can
use milk kefir grains to ferment cow
milk or non-dairy
milk like coconut but then need to replenish them in cow or goat
milk.
