Some folks
use agave syrup.
I bet you could
use Agave syrup or honey in place of the maple syrup, but I have never tested it, so if you do try it, be sure and let me know how it turns out!

If you have the time, could you explain your thought process about not just choosing to
use agave syrup as your sugar of choice, but for using it in so many recipes (implying frequent, regular consumption)?
I wouldn't
use Agave Syrup, (might as well use high fructose corn syrup).
Some use agave syrup instead, but as the quality of what's available in often in question, I'm not a fan of it.

I replaced some of the sugar with honey — vegans can
use Agave syrup instead, or Maple syrup, which would make them very un-Italian.
This doesn't go into the sugar but it is used in the filtering process, so if you want your cocktail to be 100 % vegan friendly,
use agave syrup (which blends better in liquid anyway), or unrefined sugar.
You could also
use agave syrup.
Diabetics should
use agave syrup for these.
I do not know if it is because
I use agave syrup instead of maple syrup but my brownies does not taste really sweet, and they have a strong sweet potato taste.

I did today, which was so awesome!!!! My blender was broken and sent back to repair, so i had to do everything manually, from smashing the sweet potato & dates, crushing the nuts (I
used hazelnut) into flour (this one was hard, so finally its more like bits...), and left out for the
agave syrup (was so sweet for me already), though it was lots of work but just so great!

agave syrup and hemp milk rather than almond milk because that's what I had in the cupboard.

agave as I find it doesn't spike my blood sugar so much but in terms of making a difference to the recipes,
using agave would be absolutely fine!
I just
used Pumpkin Seeds instead of Sunflower, and added a bit of
agave syrup for a little more sweetness.
Just one thought though: I have seen you
use a lot of
agave syrup in your recipes, but I read a lot of bad things about it.

used brown rice flour, and instead of
agave syrup I
used honey, and instead of raw cacao I
used cacao nibs and ground then up, I
used Parnoosh dates as opposed to Medjool because those are what we have available and I don't know if that would make a difference.
