Cucumber Peel Mask — Beauty salons
use cucumber slices for a reason.
Fresh cucumbers and a cheerful grape caterpillar are perfect at lunch — or
use the cucumber slices as «bread» for sandwiches our kids love.
I like to use grated carrot and beetroot, watercress sprouts and radish slices, but you could also
use cucumber slices, avocado, tomato, grated courgette and so on.

I
used 1 cup each of halved and thinly
sliced radishes (3 1/4 ounces), 1/2 pound of lightly cooked, cooled green and yellow beans (1/2 pound fresh) that I'd cut into 1 / 4 - inch
slices on the bias, and quartered and thinly
sliced Kirby
cucumbers (from 5 ounces or 2 whole).
Superfood Smoothies 1 C greens (any combo of spinach, beet greens, kale or swiss chard), washed and chopped 1/3
cucumber (about 4 - 5 thick
slices),
sliced and quartered 1 small beet, peeled and finely grated (
use a microplane!)
Using a melon baller or small spoon to scoop the seeds from centers of the
cucumber slices, being careful not to cut all the way through the bottom.

I have one that I picked up in Holland some 20 years ago, and
use it to
slice all sorts of things, it's great for mushrooms, carrots,
cucumbers, just about anything I want thinly
sliced.
You can
use a vegetable peeler or a mandoline to thinly
slice your
cucumber ribbons.
Gather,
slice and chop your
cucumber, tomato and olives, if
using.

For the salad: * about 1 cup tiny tomatoes (I
used a combination of cherry, sungold and yellow pear tomatoes, and
sliced the bigger ones in half) * about 1 cup chopped tomatoes, preferably heirloom (any color you like) * 1 fat kirby

This time I deviated from the traditional recipe: firstly, I thinly
sliced the meat (originally it's cubed); secondly,
used the thick cream along with sour cream; and finally, the main twist is the addition of small pickled
cucumbers.
You can
use any vegetable you wish try asparagus, pumpkin, carrot, avocado,
cucumber, shiitake mushroom, tofu, thin
sliced egg omelette, etc... Thinly
slice or julienne vegetables, parboiling if necessary tie on with a thin (1/4» or 6 mm) strip of nori or vegetable strip wrapped around the whole sushi if needed..
Top with the dressing and
sliced onion and or
cucumber, if
using.
If you aren't sure about the
cucumbers you are
using for your salad,
slice and taste the
cucumber and decide if you would like to leave the peel on, or remove it.
For delicate, thin
cucumber slices,
use a mandoline — you'll find inexpensive, good - quality ones at Asian markets.
The kids like to
use it as a dip for apple and
cucumber slices.
Using a small spoon, core out the seeds in the centre of each
cucumber slice about halfway down to create a mini bowl.
Some alterations: I
used yellow split pea instead, minced garlic from a jar instead of cloves, added
slices of yellow
cucumbers (cross pollination with lemon
cucumbers from my garden), and I marinated the ham hocks with apple cider vinegar before placement into the slow cooker.
Slice up some carrots (I buy shredded carrots to save time),
cucumber, red cabbage (you can
use coleslaw mix to save time), and radish and put them all in a big bowl.

Scoop up bites with
cucumber slices, or feel free to simply
use a fork.
Slice 1 small julienne
cucumber (or 1/3 of a large
cucumber) in half and scrape out the seeds
using your finger or a spoon.
I
used a little hand held mandolin to
slice the
cucumbers, radishes and onion super thin.
I
used a
slicing cucumber with thick skin and large seeds, so opted to remove both.
Slice 6 Persian
cucumbers on a jaunty diagonal to
use as scoopers, throw those in a Ziplock, toss that in a fridge, and you're golden.

used for pickling

I
used a mandolin to cut the mangoes, carrots and
cucumber in uniform thickness then I
sliced them into julienne sizes.
Here's how I do it:
Slice or smash 3 medium Persian
cucumbers (you could also
use one large English hothouse or Japanese
cucumber, which are also thin - skinned and not too seedy).
Top with shredded cabbage, cherry tomatoes,
sliced cucumber, green onions, mint, cilantro, basil and chili (if
using) and gently toss with your hands to combine.
