I say keep cans for emergency or immediate needs but
use dried beans as mucha s you practically can.

used just one can of
beans (
used slightly more pumpkin to make up lost volume), rice wine vinegar in place of sherry vinegar, white wine in place of
dry sherry, no ham, no shallot (extra onion added), and tomato sauce instead of canned whole!
You can triple or quadruple this
dry bean recipe or
use it
as is with a 1 1/2 - quart slow cooker.

Using the is liquid drained from a can of legumes such
as chickpeas or small white
beans, is probably the simplest way, but you can also get aquafaba from cooking
dried beans in water for a couple of hours.
I don't
use baking soda, I either overnight soak the
beans or do a quick soak,
as directed on the package (I
use Whole Foods» 365 organic
dried garbanzos) and then cook
as instructed.
Try it again
using beans that are
dried, (but
as fresh
