Start by
using a frozen pie crust.
I cheated and
used a frozen pie crust but I added the apricot preserves.
The filling is really fairly simple, and if
you use a frozen pie crust like I did (insert - surprised - emoji - face - here), it's as easy as 1 -2-3.
If
using a frozen pie crust, you do not need to blind bake it.

I haven't
used frozen pie shells in years (I usually
use a homemade
crust or a Pillsbury refrigerated one).

freeze them and same goes for your

I've been making this tomato
