I used grated courgette in stead of applesauce and someone else used pumpkin purée.

courgette as that is what I had - I did squeeze some of the juice out of the
grated marrow.
They are very quick to put together especially if you
use a food processor to
grate the
Courgettes and buy the ready
grated Parmesan, other cheeses can be added and Gruyere is another favourite here.
