When I realized we had all the ingredients for
guac anyways, I went ahead and
used them to inspire my new recipe.
They don't
use chips from a bag, which is a plus and the
guac is homemade.
I had planned on serving with lime slices and avocado but decided to
use my extra ones to make more
guac!
I
use organic corn as my secret ingredient, it makes the
guac slightly sweet and fits into my argument that guacamole is a perfectly OK dinner food.
My basic
guac recipe
uses 1 avocado, ~ 2tsp of fine chopped red onion, juice of a half a lime, ~ 2tsp of olive oil along with course salt, fresh ground pepper and chopped cilantro to taste.

Clearly,
guac and smoothies are great and I'm happy to
use up by slightly past prime avocados in those types of recipes, but I'm always looking for a way to
use up ALL my avocados.
Then I surrounded it with colorful, sliced heirloom tomatoes, fresh spinach, cilantro, diced mango (or you could
use fresh peaches once they're in season), and a giant dollop of peach
guac.
I happen to like heat in my
guac, so I
use smokey chipotles in adobo sauce.

Sure, you could
use purchased
guac and shells, but the homemade versions are super simple to make and far more delicious than anything you can find in stores.

I already eat a lot of
