Hi Sandra, quick question, can you use guar gum instead of agar - agar because it's so expensive and I noticed with soba noodles all the ones I found have a little sugar in them, would it set me back if i ate some that contained less than 1 gram?
I think it might help if you use guar gum - I think xanthan gum would help too.

I'll use guar on occasion, but I've found that in a lot of recipes that I've found on line, I can eliminate the xanthum and still have excellent results.
I am allergic to all aspects of corn and xanthan is derived from corn so I use guar but it does nt always turn out right.

I sub out the cornstarch with arrowroot, and use guar instead of Xanthan because the corn makes me sick.

Hi Heidi, from what I can tell none of the people who have made this egg - free have used guar or xanthan — I never use either as I hate the gummyness so I can't advise on amounts if you were to use.
