I'd normally
use lamb shanks in this family favourite dish, but decided to try a lamb leg for a change.
For this recipe
we use a lamb shank that is so sublimely tender, it melts in your mouth just as quickly as the dough that surrounds it.

classically it's veal
shanks - but certainly you can
use the same technique on any
shank - beef and
lamb are two others often
used.
My favorite winter soup is a lab
shank soup my mom
used to make, a combo of
lamb shank, lentils, rice, etc..
Usually I go for
lamb shanks but I decided to mix things up this time and
use venison for its gamey flavour.
You can always
use lamb but you might want to double the amount of
shanks you
use as the venison is larger.

used different cuts of
lamb, beef and chicken in the sous vide, including
lamb shank, Ox cheek and Chicken Breast.
First time cooking
lamb shanks, and
using star anise and lemon grass, delighted with the results!
Halved all the amounts for 2
shanks and
used chicken stock instead of
lamb stock.
However, they can be awkward to
use for a whole chicken or
lamb shanks — in which case, an oval bowl will make getting meat in and out easier.
