I know it sounds very strange to put
avocado in something sweet and it's been a bit
of a trend in healthy eating, I'm sure lots
of you are skeptical
of it, but we think it's definitely worth trying as
using this is very creamy and we don't think you can taste the veg — instead you taste deliciously chocolaty tones with sweet hints
of dates and a little banana, then you get the crunchy almonds and the yoghurt and chocolate sauce...
The texture perfectly echoes that
of carbonara, which
used to be a family favourite, except all the unhealthy, fatty dairy, refined flour and meat is replaced by magical
avocados, brazil nuts and mushrooms.
I have a slight reaction to

I served mine with your
avocado, mango and pomegranate salad (slightly modified as I
used pumpkin seeds instead
of sunflower seeds) but I have to say the mango chilli dressing is by far the BEST salad dressing I have EVER tasted!
Thought Jess might like to know that I have made a similar recipe to the chocolate mousse
using avocado and it kept well for a number
of days covered in the fridge.

I
used coconut oil instead
of avocado and almond meal + coconut flour instead
of coconut flour + arrowroot flour..
1) Peel and cut mango,
avocados, onion and tomatoes into cubes / dices accordingly 2) Place cubed / diced ingredients in a large bowl 3) Squeeze lime juice over ingredients, add salt & pepper to taste and mix well 4) Pre-heat oven to 180 deg cel 5) Pile all the tortilla sheets in one stack, and cut them into 10 - 12 slices (as if you were cutting a pizza) 6)
Use a brush to spread a little bit
of oil on both sides
of the cut tortilla sheets 7) Place greased cut tortilla sheets onto a baking tin / tray, making sure not to overlap them (if there is not enough space, toast them in various batches) 8) Toast tortilla chips until crispy and slightly golden brown 9) Serve dip with toasted tortilla chips

This Mexican style
avocado soup
uses this premise to enhance the bioavailability
of the cartenoids found in paprika.
For this creamy Key Lime Pie Smoothie, I
use spinach, a half
of an
avocado, almond milk, lime juice, honey, a few cubes
of ice and my secret ingredient, a packet
of Carnation Breakfast Essentials Classic French Vanilla Powder.
As for the
avocado, I would probably
use a mixture
of whipped coconut milk and coconut oil to replace it.
What kind
of avocado did you
use and was it really ripe?
Chia and hemp seed (
used in their whole / unground form) are also excellent sources
of fiber that can be added in a similar fashion (hemp seed also works well sprinkled on salads and
avocado toast, bringing a mild nutty flavor and pleasant texture) and chia is yummy in slurry and pudding form.
* 2 cups uncooked quinoa, soaked for 2 - 3 hours (optional) and then rinsed thoroughly in a fine - mesh strainer * 4 cups water * 2 cups fresh corn (cut from from approximately 2 ears) or organic frozen corn * 1 very small red onion, diced * juice
of 2 plump limes * two 15 - ounce cans (or one 28 - ounce can)
of organic black beans, drained and rinsed (or soak and then cook an equivalent amount
of dried beans) * 2 tablespoons minced jalapeño chile, or to taste * 1 ripe
avocado, diced * 1 large bell pepper (I
used a red one), diced * 1 bunch fresh cilantro, chopped * 6 tablespoons
avocado oil or extra-virgin olive oil * Coarse sea salt and finely ground black pepper
However, the addition
of the
avocado, sour cream, shredded Mexican style cheese and crushed tortilla chips (I
used Mission chips) made it a lovely dish!
Next, drizzle the
avocado cream over each taco
using a spoon or plastic bag and making a hole in one
of the corners.
You could
use avocado oil, or if you wanted the flavor
of EVOO, whisk or stir in by hand at the end to prevent bitterness.
Turned out I didn't have any
avocado because mine had gone bad so I
used a can
of peas instead and they worked great!
Because
of the nutritional value
of avocados and the fact that they are available year round, I'm always looking for more and more ways to
use them.
