I did today, which was so awesome!!!! My blender was broken and sent back to repair, so i had to do everything manually, from smashing the sweet
potato & dates, crushing the nuts (I
used hazelnut) into flour (this one was hard, so finally its more like bits...), and left out for the agave syrup (was so sweet for me already), though it was lots
of work but just so great!

used pumpkin instead

of zucchini.

of coconut milk

of stock and half a block
of creamed coconut so it was more
of a spicy carrot puree on the sweet

I had two slightly past it small aubergines that needed
using so I put them in along with a can
of chickpeas, and I
used fewer
potatoes.
Start by cutting your sweet
potatoes into cubes (about 1 cm wide); place them in a baking tray along with the drained chickpeas and drizzle in olive oil, a pinch
of cumin, salt and pepper —
using your hands to ensure they all get a good coating.
I didn't have a few
of the ingredients (parsnip & celery) but i
used potato and orange peppers and
of course the carrots and it still came out amazing.
Due to a lack
of lentils I
used a medium - sized sweet
