Vanessa, you can
use egg replacers regardless which part
of the
egg your recipe calls
for.
You can also
use pureed pumpkin as a replacement
for both the
eggs and the oil in brownies (if
using a boxed mix, just add a can
of pumpkin puree and bake as directed).
For instance, tofu, apple sauce, commercial
egg substitutes, and bananas can often be
used in place
of eggs.
It can be
used in many recipes in place
of cheese, such as mashed or fried potatos, put into scrambled tofu as a substitute
for scrambled
eggs.
I just made these vegan
using earth balance instead
of butter, 2 tbs ground flax mixed with 3 tbs water
for egg, and dairy free chocolate chips (no white chocolate chips).
Use a spatula to create 4 small wells
for the
eggs, and place a bit
of the remaining ghee in each well.
I
use pasteurized
eggs for this recipe because there is no risk
of contamination in the finished mayo.
This came especially helpful when I was right in the middle
of baking muffins and realized we just
used the last two
eggs for dinner!
