Using a knife, cut 1 inch slits into the top of the
Ribeye roast.
It was actually my intention to
use steak in these fajitas, like in the original recipe, but Tom ended up making an impromptu trip to the butcher's a night earlier in the week to pick up some grass - fed
ribeyes (mmm).
You can also
use flank steaks in this recipe; or, if you'd rather spend the money,
ribeye, sirloin strip, and New York strip steaks are great with the herby, garlicky chimichurri sauce.
So, the great thing about this Beef Tenderloin & Tomato Pizza with Ancho Crema is that you can
use thin slices of any leftover steak like top sirloin,
ribeye, flat iron — or even fajita meat!
Buy a tender, well - marbled cut (I am partial to
ribeye), marinate it (maybe some garlic, soy sauce, and worcestershire sauce) or
use a dry rub (here I
used an Herbs de Provance salt mix on a steak that's a little less than a pound).

I've had great success
using NY strip steaks,
ribeyes, and sirloin for this salad, but you could also
use flank or skirt steak cooked medium rare and cut against the grain.
I
used a New York strip, but a boneless
ribeye or filet mignon would work equally as well.
Use a rich cut like tri-tip, top sirloin, or
