I used oats and some shredded coconut because I didn't want my cake to be too nutty since the cream is made of nuts too, but if you want, you can use almonds, walnuts or any other nuts you like.

For those of you who are having trouble with it being too dry, I followed all of the directions exact except I added walnuts and used regular salt.
I also use cashews instead of the traditional pine nuts for a more wallet friendly option but you can use pine nuts, or walnuts too if you prefer those.
I subbed sunflower seeds for the walnuts since I didn't have any on hand and ended up with extra grated carrot that I threw in, too and used cinnamon instead of ginger.
