For today's recipe I used a mixture of quinoa and red lentils, but you could easily
use wheat berries or couscous if you prefer.
Vegan:
use the wheat berries, kale and beans only.
Vegetarian:
use the wheat berries, kale, beans and top with your favorite cheese.
I love to
use wheat berries as a salad base.
And there's a commercially available Rejuvelac you can buy in many parts of the country and I think
they use wheat berries.

Everyone has given them the thumbs up so I have
wheat berries soaking right now (
used all my sprouted flour).
Because it is a whole
wheat flour it all of the
wheat berry is
used - the germ, the bran, and the endosperm.
Other grains you can
use: brown rice,
wheat berries, cracked
wheat, pearl couscous, or wild rice.
It was leftover —
use any leftover grain that you have like brown rice,
wheat berry, couscous and so on!

used semi-pearled farro here, but you can certainly substitute whole farro,
wheat berries, barley, or other plump grains.

I made this dish on Sunday morning with pearled barley instead of
wheat berries (shorter cooking time) and I
used craisins instead of real cranberries and dry fruit.
But I've also
used soft
wheat berries (from Rainbow) many times in the past.
If
using whole farro, barley, freekeh, or
wheat berries, put them in with the chickpeas, as they take about 40 minutes to an hour to cook.

Just to name a few types of flour you can make:
Use almonds to make almond flour, dried quinoa for quinoa flour, uncooked old - fashioned rolled oats for oat flour, and
wheat berries for
wheat flour.
Rye
berries have a rich nutty flavor, but you can
use any firm whole grain instead (farro,
wheat berries, and spelt are all good choices).
This recipe for
using einkorn
wheat berries in a salad is perfect for summer entertaining or everyday meals.
I've never tried this with anything other than all purpose flour, but I've got soft white
wheat berries and will grind and
use those to make it for the family over the holidays — then I'll report back and let you know how that went.

Typically you can also
use rejuvelac, which is fermented
wheat berry juice which works really well and is similar bacteria as kraut.
Another option is to dry sprouted
wheat berries in a low - temperature oven or dehydrator, and then grind them in your grain mill and then
use the flour in a variety or recipes.
This roll recipe
uses a different flour (the white sprouted
wheat berries), so it is possible that it would turn out well without the added gluten.
In addition, traditional populations
used older, unmodified strains of
wheat and utilized stone - ground whole
wheat berries rather than refined white flour.
On this particular day we
used farro but
wheat berries and spelt also do a great job of maintaining their chewy, nutty texture throughout the week.

used traditionally to help protect against cataracts, glaucoma, and macular degeneration; Sun protection — make sure to wear eye protection whenever out in the sun to help reduce the risk of eye health issues; Lifestyle modifications — smoking and drinking are known health risks, but also for the eyes; and the possible upcoming Eye Drop intervention — drops containing Lanosterol have been tested on 3 dogs that cleared their vision after 6 weeks of
using these drops — unfortunately, it's not yet available for human
use at this time.
I like to grind them with my
wheat berries and
use them whenever I'm
using whole
wheat flour in a recipe just to up the nutritional value a notch when I'm baking.
1 cup buttermilk (
use organic raw milk and add a couple drops of lemon essential oil to curdle it, or
use genuien organic raw buttermilk) 1 Tbsp coconut oil 1/2 cup organic oats 1/2 cup organic brown rice (or
wheat berries, or millet, or barley)
Fresh grinding of
wheat or rye
berries before
use will ensure that the original amount of phytase remains in the flour.
