use winter squash and I think this was a perfect cold weather meal.

From chow mein to salad and casseroles to soup, I've created a list of 10 creative and delicious ways to
use this winter squash.
The one change I might make (as I am on Weight Watchers) is to
use winter squash instead of the sweet potato — but, honestly, this sounds yummy just the way it is.
I used winter squash to take the sweetness down a notch, and the sweet and salty flavors in this soup go really well together.

I make a similar meatless chili in a crockpot (I make a LOT at once and freeze for a quick lunch or dinner for 1 or 2)- and I think you'll like this idea: along with carrots, celery, onions and garlic, I usually
use 3 - 4 cans of (low sodium, rinsed) beans (2 kidney, 1 each of another; I like black and small white or pink beans), 3 - 4 red / yellow / orange sweet peppers (I but at the farmer's market when fresh and cut up and freeze the extras for making chili in the fall /
winter); 1 or 2 zucchini and / or yellow
squash, and (drum roll) 1 can of organic PUMPKIN PUREE!
Use on a
winter day for any of the following dishes (replacing the roots listed with
squash or pumpkin!)
Use your favorite vegetables; any vegetable that will stand up to roasting, including onions, leeks, bell peppers, turnips, parsnips, sweet potatoes, carrots, fennel,
winter squash, mushrooms, cauliflower, broccoli.
If you can't find sweet dumpling
squashes, you can
use any kind of
winter squash in this recipe (or try it with sugar or «cheese» pumpkin).
I simply
used potatoes, cauliflower, and radishes because they looked good at my market, but
winter squash would be a nice alternative.
I think you can
use just about any orange - fleshed
winter squash or pumpkin in this recipe — butternut
squash would probably be the closest approximation to «calabaza».

I know kale is difficult / impossible to find in Belgium outside of the
winter season and had already planned to
use spinach, but I thought for sure that I could find a summer

use up so that's what went into this version but any root vegetable or

used white cheddar, manchego and point reyes blue cheese, which we had in the fridge, and summer
squash instead of

Canned pumpkin is fine in this recipe, if you are feeling more adventurous you can roast your own pumpkin (or
