Just made this with a few substitutions (I don't have Sriracha so I just
used Cholula, for example) and it was SO.
I love to
use Cholula hot sauce in these, but use your favorite medium heat hot sauce (like, don't use Sriracha, but Tabasco would be fine.)
I use Cholula as a salt substitute flavor enhancer.

used the hand blender to shred) add melted butter,
cholula hot sauce and blue cheese.
I
use the yellow, spicy, garlicky sauce from Cafe Yumm and put it over rice, beans of choice, salsa, sour cream, avocado, cilantro, cheddar cheese, pickled jalapeños and
Cholula sauce.

Here in the Northeast it is usually Frank's RedHot Hot Sauce, but in other parts of the country you might find Crystal Hot Sauce or
Cholula, both of which will work nicely, though people around here will accuse of you heresy if you
use anything but Frank's.
