Using the cruciferous arugula — instead of
baby greens or other
lettuce — gives this salad a spicier flavor that complements the mild sweetness of the kohlrabi.
Use a variety of greens, including romaine, mixed greens, mesclun mix, arugula,
baby spinach, Boston
lettuce, and watercress.
If you have some standard iceberg
lettuce, go ahead and
use it for the splendid crunch, but mix in some other greens like escarole, frisee, or even
baby spinach.
