I love that you've
used beetroot juice - that's a lot healthier I suppose?
I suspect I would have loved it more as a kid, when the idea of a red cake would ave been intriguing... Clever idea of
using beetroot juice though - it looks gorgeous even if it tasted bland!
Great idea to
use beetroot juice, when I made mine I only put a few drops of red food colouring (couldn't bring myself to use any more than that) and it turned out brown haha.
I'm an elite cyclist and

juice with the juicer, i think i will
use the remaining pulp next time for this (instead of making oatmeal with it, or stuffing my face because i don't want to throw it away with my
beetroot pulp i made amazing falafels the other day!

Beetroot Spiralized Salad
Using red and golden beets, this simple salad has a fun spiralized texture, flat leaf parsley, sesame seeds, chili flakes, and a creamy dressing made from coconut cream, tahini, grated ginger, lemon
juice, tamari, and raw honey or maple syrup as an optional addition.
2 - 3C Grated Carrots 1 - 2C Grated
Beetroot (I
used a food processor to save time, although I think done by hand the shreds are a little nicer) 1 / 2C Golden Raisins or Currants 1 / 4t Sweet Paprika 1 / 4t Ground Cumin 1 / 4t Ground Cinnamon Dash Cayenne Salt + Pepper 2 1/2 T Lemon
Juice 2t Agave syrup Fresh mint to garnish
Grate about a 1/2 tbsp of
beetroot to extract 1 tsp of beet
juice (or
use other fresh beet
juice).
With the colourings, I
used strained
beetroot juice and frozen blueberries.
1 teaspoon olive oil 2 leeks, thinly sliced 250g Swiss chard 3 large golden
beetroot 100g low fat feta Lemon
juice Extra virgin olive oil —
use the best one you have Flat leaf parsley or mint Black pepper
You could turmeric for yellow, or spirulina for green,
beetroot powder for red or pink you can even choose to
use some purple cabbage
juice to go for a purple colour, be bold, be wild, be colourful!
1 Onion chopped 450g
beetroot, peeled & sliced (or can
use ready cooked
beetroot) 2 celery sticks 1/2 red pepper, chopped 115g mushrooms, chopped 1 apple, chopped (I've tried all kinds of apple and find granny smith is the best) 23g Butter 2 tbsp Olive oil 1L vegetable stock 1 heaped tsp cumin seeds 1 bay leaf
Juice of 1 lemon Salt & black pepper to taste
It's quite a scary and unapproachable vegetable, especially if you don't know what to do with it, but
juicing is the perfect way to
use beetroot!
