used canned cream of mushroom soup for chicken and rice casserole.

We made this recipe tonight, only we
used (a not as healthy) a
can of the
cream of chicken &
mushroom soup instead
of just
cream of chicken.
Do you prepare the
cream of mushroom soup as the
can says with a
can of water, or do you just
use the
soup undiluted?
We doubled the recipe and didn't have celery, so we
used one
can of cream of celery
soup and one
can of cream of mushroom.

I tried my hardest to veganize her recipe and this is the closest I could get... Grandma's recipe calls for
cream of mushroom soup and since I clearly wasn't
using a
canned dairy - based
soup, I thought, why don't I just put it in a
mushroom?
I've made stroganoff recipes before, but only ever with the good ol'
cream of mushroom soup cans, onion
soup mixes, etc. and I mean, yeah, it's still yummy, but I don't really like to
use all
of that processed stuff if I
can avoid it so I've been working to create a more natural beef stroganoff recipe and this Instant Pot version is simply divine!
Variation:
Use one
can of condensed
cream of mushroom soup in the meat mixture for a creamy filling.
I also often
use 1
can of cream of celery
soup and 1
can of cream of mushroom soup and sometimes add a half cup or so
of mayonnaise and it comes out very good.
This
soup is a great substitute for
canned cream of mushroom and
can be
used anywhere that condensed
cream -
of -
mushroom is called for.
