Could not find chocolate graham crackers, so
used chocolate wafer cookies instead.
We frequently make icebox cake for birthdays —
using those chocolate wafer cookies (layered with fresh whipped cream then stack into a roll) as that was my favorite cake growing up!
So when I decided to make cheesecake again and
used those chocolate wafers in the crust, I felt a small sense of victory.
But if you wanted to add a chocolate element to it, you can
use chocolate wafers for the crust instead!
Most of
them use chocolate wafers as the base and whipped cream in between layers.
I made
these using the chocolate wafers for the centers and had to use buttermilk powder in place of the buttermilk / yogurt / sour cream.
Using chocolate wafers instead of chips is a cookie game - changer.

I
use Callebault as well as white
chocolate wafers, coloured with orangefood colouring.

I've never seen the
chocolate wafers here but I am thinking maybe I can
use chocolate chips and just push them in point side down.
Rather than
using the semi-sweet
chocolate chips combined with shortening and peppermint for coating the cookies,
use Ghirardelli Dark Melting
Wafers.
Using your fingers, press
chocolate wafer mixture into bottom of a 13 x 9» pan, which you've covered with aluminum foil — edges hanging over.
Note: I
used some of the Mexican - spiced
chocolate cookies I had made over the weekend, but you can
use store - bought plain
chocolate wafers.

Many of you will recognize the
chocolate wafer cookies - they are very similar to the ones I
use in the Thin Mint Cookies in Super Natural Cooking, so if you've made those, you know the drill.
I also had to
use a few more
chocolate wafers / butter to get the crust to spread without holes.
My mom
used to
use those thin
chocolate wafers for ice box cakes.
If you would like a touch of
chocolate in this pie, you could
use some
chocolate biscuits or
wafers to make the crust as well.
Organic milk
chocolate wafers are perfect for melting and molding into candy creations or
using as a fondue for fruits and desserts.
I just wish that I had
used real 70 % dark
chocolate; never
use the «dark»
chocolate baking
wafers that are found at bulk stores, as they are very sweet (definitely not 70 %) and don't taste that awesome.
