In making this cake I
used cultured
coconut milk (it
used to be called
coconut kefir) in place of the buttermilk.
Like regular
milk kefir,
coconut milk kefir is made by
using milk kefir grains to ferment the

We found that it took around 7 weeks of regular fermentation in dairy
milk to fully recover
milk kefir grains so that they would reproduce after having been

I was thinking of
using kefir milk instead of
coconut milk.
I don't do well with yogurt or
kefir so I
use coconut milk instead.
However, if you are
using watered down «drinking»
coconut milk from a tetra pak (not all brands are watered down for drinking), then you will need to either drip it thick like old - fashioned yogurt, or
use it like
kefir in smoothies.
You can
use milk kefir grains to ferment cow
milk or non-dairy
milk like
coconut but then need to replenish them in cow or goat
milk.
As So Delicious doesn't make
coconut kefir anymore, I
used goat
milk kefir (Redwood Hill Farm)-- per cup: 140 calories, 10 carbs, 5 sugars, fiber 0, protein 8, fat 8.

use a starter culture, make sure to
use a non-dairy whey from

Kefir also be made
using nut
milks such as soy, almond,
coconut etc..
You can
use almost any kind of
milk to make your
kefir, and if you do
use water or
coconut milk (or water) your
kefir will most likely be much thinner than if you
use a
milk.
Kefir is easy to make at home
using organic, raw, grass - fed
milk, or
coconut water, and will contain far more probiotics than you can get in supplement form.
Because of the many strains of bacteria in
Kefir, living in symbiosis, it doesn't matter which medium is
used to grow it in: raw or processed
milk, soya
milk,
coconut juice or even in sugar water.
All of the references for
using coconut water with water
kefir grains are for
coconut milk with
milk grains.
You could
use the same
kefir grains in the
coconut milk for 3 - 4 days and then switch with the ones that were sitting in
milk.

milk kefir... just make sure that you have grown your new
kefir grains in fresh
milk for at least six weeks so that they have a good micro flora balance when they are transfered to a new medium to grow in.
Question: I have been happily making
kefir using organic canned
coconut milk... However, the
kefir grains do not grow or increase... I pretty much have the same amount I started with a couple of months ago!
After you start your first batch of
kefir (in
milk or the liquid from the young
coconut), you can
use a small amount of that first batch to make your second batch.
I make
kefir using coconut milk and I would just put the
kefir grains in dairy
milk afterwards for a day to keep them alive.
