So what we will do here is describe each of these processes
used to manufacture «virgin
coconut oil» for
products currently found in the U.S. market, realizing of course that anyone can choose to
use the term on a label, even if it is commercially refined
coconut oil.
As I continue my venture into gluten - and - grain free cooking, as well as avoiding refined sugars, I have been
using more
coconut products in my baked goods — the
oil is great for flaky scones, for instance, and the flour makes a good substitute for grain - based flours.

using coconut oil and milk recently and love both

The only non-fructose one I
use is rice syrup, if you add more than a few Tbsp of it I'd up the
coconut oil a touch to account for the extra liquid (the
coconut oil is what makes it firm up in the fridge) but a granulated stevia - based
product (or simply stevia drops) shouldn't change the consistency at all!
After tasting all of the
products, I set to and baked this
coconut chickpea chocolate cake
using the nectar and
oil.
The last Nutiva
coconut oil product I
used, which I am now out of, melted at over 76 degrees which was great for medicinal
use, because it also re-solidified, or became gel like anyway, back again at less than 76 degrees.
For this reason, we will be
using the term «organic virgin
coconut oil» going forward, but our high quality
product and processes will remain the same.
I am thinking of
using half butter (ghee) and half
coconut oil, but I'm worried the cooked
product texture will be too dense (as at room temp, both those fats are a solid).
You're right though,
using a refined
coconut oil does help reduce the
coconut taste in the finished
product.

coconut oil is costly and my aim is not only to avoid
using unethically sourced
